Meatball Sliders

2lbs ground beef, ground pork, ground veal (mix)

3 thick slices hearty white bread, cubed

1 cup whole milk

2 eggs

1/4 cup parsley, chopped

4 garlic cloves, minced

1/2 cup sweet onion, minced

1 cup parm or pecc, grated

1 tsp. salt

1/2 tsp. ground pepper

Mix bread and milk in large bowl, let soak.  Add eggs, mash with a fork until smooth.  Add meat, garlic, onion, parsley, cheese, s/p.  Mix well – but with a gentle hand – do not over mix.  Cover and refrigerate for at least one hour.

Make balls to prefered size, then either fry in olive oil or in the oven (425F).  Drain on paper towel, add to a simple tomato sauce.  Serve.
